 Easy answer first. I use a Canon D60.
If there's some amount of confidence that you get from looking at Nikon's website, I see no foreseeable problems with going with your instincts. But for me that's only because I feel Nikon or Canon wouldn't make that much of a difference. Both are at the top as far as reputation and quality. Although Canon did have some problems with two of their most recent models when they first came out. But they have addressed the problems and things are fine.
Assuming that it's architecture that you need to take pictures of, your questions about taking photos up close and distant is more about lenses than which camera. And I don't know if you plan on doing whole buildings or interiors, etc...I'm guessing mostly you'd need wide angle to 50mm.
Since you have a set amount for a budget, you might consider looking at used cameras as well. Since prices drop so much each time a new model comes out, you might be able to find a late model with full frame, that at least has the same pixel amount as a 50D. Since you want to make large prints, a high pixel amount will let you do that with a minimal amount of interpolation. And I think a full frame will serve you well for shooting interiors if needed.
The 50D sounds like a good choice. But don't hesitate to consider others. Since you're a student, you're needs and what the pictures are for are different than somebody who would be doing it for a paying client.
